01The list

Fourteen coffees on the list. Never fifteen, because something has to leave first.

Miguel buys in small lots, usually 10 to 40 bags, so the list turns over about every eight weeks. When a lot runs out we say so on the page and move on.

If you find one you like, put it on a subscription. When its lot sells through, we write before swapping in a replacement from the same producer or the nearest thing on the list.

02The roastery

A 15 kg drum, two mornings a week, and a logbook.

Greta roasts Tuesday and Friday from 6 am. Every batch gets a line in the logbook: charge temperature, first crack, drop time, and what we tasted at the cupping table that afternoon.

The roast date on your bag comes from that book, not from a printer default. If a batch cups flat on Wednesday, it does not ship.
